Chicken ( 5 pieces whole/ 4 fresh fillets, cubed)
2 onions, finely chopped
2-3 cm piece ginger, peeled and grated
2 garlic cloves, minced
1 sweet potato, peeled and cubed
1 can crushed tomatoes/ 2 fresh tomatoes, chopped
1 cup chicken stock
1 cup coconut milk
1/2 cup peanut butter
1/2 cup roasted peanuts
1 tbsp ground coriander
1 tsp cayenne pepper
1 tsp curry powder
1/2 tsp hot sauce (Tabasco, sriracha)
Salt and Pepper
1 cup spinach/Swiss chard, chopped
Heat the oil in a large pot, fry the onions, garlic and ginger, add tomatoes and cook to soft. Add sweet potatoes, stir to combine.
Add the chicken, chicken stock and coconut milk. Stir through. Add spices, peanut butter, roasted peanuts and allow the stew the simmer, covered, for 30 mins.
Add chopped spinach and cook to soft. Add salt and pepper.
Lastly, add chopped Coriander and adjust seasoning if needed
Served with creamy pap
