What You Need:
1 onion diced
garlic and herb spice
100g bacon, diced
400g mushrooms, sliced
5ml thyme, dried
How To Make It:
Saute the chopped onion in a frying pan until transparent. Sprinkle with garlic and herb spice
Add the bacon and saute till brown. Then add the mushrooms and thyme and saute until lightly golden brown.
Add the cream and gnocci and allow to simmer on a gentle heat together for 10 minutes or until the gnocci is soft and cooked through. The cream should be reduced. Check seasoning and add salt and pepper if necessary. Serve with grated parmesan and fresh basil or micro-herbs.
Hints: You may substitute the bacon with macon or chicken.
You may add green peas or asparagus for a touch of colour.
You may add fresh garlic to taste.
In this dish you add the gnocci directly to the cream to cook and
do not have to cook it in water first.
